Ham and Broccoli Ranch Noodles

Ingredients

  • 1 (16-oz) pkg egg noodles
  • ¼ cup butter
  • 1 (16-oz) pkg diced ham
  • 2 tsp minced garlic
  • 1 cup sour cream
  • 1 cup Ranch dressing
  • 1 (12-oz) pkg broccoli florets
  • ½ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain and place in a large bowl.
  2. Meanwhile, melt butter in a large skillet over medium heat; add ham and garlic. Cook, stirring occasionally, until ham is lightly browned. Stir in sour cream and dressing. Cook just until thoroughly heated. Add to pasta; toss.
  3. Steam broccoli in microwave according to package directions. Add to pasta mixture; toss. Season with salt and pepper to taste. Sprinkle with cheese.

Side Dish Ingredients

  • 1 (20-oz) can pineapple chunks in 100% juice, drained
  • 1 (15-oz) can mandarin oranges, drained
  • ½ cup sweetened flaked coconut
  • ½ cup sour cream (or use vanilla Greek yogurt)

Side Dish Instructions

  1. Combine pineapple, oranges, coconut, and sour cream; stir until well blended. Chill until ready to serve.
