Mixed Greens Salad with Pears and Walnuts

Ingredients

  • 2 (12-inch) prebaked pizza crusts
  • 6 Tbsp Alfredo sauce
  • 1 (8-oz) pkg sliced mushrooms
  • 1 red bell pepper (or use yellow bell pepper), sliced
  • ½ small red onion, thinly sliced
  • 1 pint grape tomatoes, halved
  • 1 (8-oz) pkg shredded Italian-blend cheese
  • ¼ cup fresh basil leaves

Instructions

  1. Preheat oven to 425°F. Place crusts on 2 large baking sheets.
  2. Spread sauce on crusts; top with mushrooms, bell pepper, onion, and tomatoes; sprinkle with cheese.
  3. Bake 10 to 15 minutes or until browned and cheese melts; sprinkle with basil before serving.

Side Dish Ingredients

  • 2 (5-oz) pkg mixed baby greens
  • 3 pears, cored and sliced
  • 1 cup chopped walnuts
  • ⅓ cup vegetarian balsamic vinaigrette

Side Dish Instructions

  1. Combine greens, pears, and nuts in a bowl; drizzle with vinaigrette, and toss.
