Cheater's Lasagna

Ingredients

  • ½ (16-oz) pkg wide egg noodles
  • 1 (12-oz) pkg frozen veggie crumbles
  • 1 (24-oz) jar pasta sauce
  • 1 (8-oz) can tomato sauce
  • 1 tsp Italian seasoning
  • 1 (16-oz) carton low-fat cottage cheese
  • 2 cups shredded low-moisture part-skim mozzarella cheese
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Cook egg noodles and veggie crumbles separately according to package directions.
  2. Meanwhile, cook pasta sauce, tomato sauce, and Italian seasoning in a large skillet over medium-high heat 5 minutes until thoroughly heated.
  3. Combine noodles, veggie crumbles, and cottage cheese; stir into pasta sauce mixture. Spoon into a greased 13- x 9-inch baking dish; sprinkle with mozzarella and Parmesan cheeses.
  4. Bake 15 minutes or until bubbly.

Side Dish Ingredients

  • 2 heads Bibb lettuce, chopped
  • ½ cup freshly grated Parmesan cheese
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together lettuce and cheese. Drizzle dressing over salad; toss.
