Cheater's Lasagna
Parmesan Bibb SaladIngredients
- ½ (16-oz) pkg wide egg noodles
- 1 (12-oz) pkg frozen veggie crumbles
- 1 (24-oz) jar pasta sauce
- 1 (8-oz) can tomato sauce
- 1 tsp Italian seasoning
- 1 (16-oz) carton low-fat cottage cheese
- 2 cups shredded low-moisture part-skim mozzarella cheese
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Cook egg noodles and veggie crumbles separately according to package directions.
- Meanwhile, cook pasta sauce, tomato sauce, and Italian seasoning in a large skillet over medium-high heat 5 minutes until thoroughly heated.
- Combine noodles, veggie crumbles, and cottage cheese; stir into pasta sauce mixture. Spoon into a greased 13- x 9-inch baking dish; sprinkle with mozzarella and Parmesan cheeses.
- Bake 15 minutes or until bubbly.
Side Dish Ingredients
- 2 heads Bibb lettuce, chopped
- ½ cup freshly grated Parmesan cheese
- ½ cup olive oil vinaigrette
Side Dish Instructions
- Toss together lettuce and cheese. Drizzle dressing over salad; toss.
