Ham and Spinach Frittata
Greens with Lime Dressing & Almonds
Ingredients
- 6 large eggs
- 1 Tbsp butter
- 1 Tbsp olive oil
- 3 green onions, diced
- 2 cloves garlic, minced
- 1 (5-oz) pkg spinach
- ½ cup shredded Monterey Jack cheese
- ½ cup diced ham
- ½ tsp salt
Instructions
- Preheat oven to 350°F. Beat eggs lightly in a bowl.
- Melt butter with oil in a small 6 or 8-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and all liquid is evaporated.
- Pour egg mixture over spinach; stir in cheese, ham, and salt. Transfer skillet to oven, and bake 20 to 25 minutes or until center is set.
Side Dish Ingredients
- 3 Tbsp sliced almonds
- 1 (5-oz) pkg spring mix
- ½ cup grape tomatoes, halved
- 2 Tbsp lime juice
- 2½ Tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toast nuts in a small skillet over medium heat until fragrant.
- Place spring mix and tomatoes in a bowl.
- Whisk together lime juice, oil, mustard, salt, and pepper. Drizzle over spring mix; toss. Sprinkle with nuts before serving.
