Ham and Spinach Frittata

Ingredients

  • 6 large eggs
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 3 green onions, diced
  • 2 cloves garlic, minced
  • 1 (5-oz) pkg spinach
  • ½ cup shredded Monterey Jack cheese
  • ½ cup diced ham
  • ½ tsp salt

Instructions

  1. Preheat oven to 350°F. Beat eggs lightly in a bowl.
  2. Melt butter with oil in a small 6 or 8-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and all liquid is evaporated.
  3. Pour egg mixture over spinach; stir in cheese, ham, and salt. Transfer skillet to oven, and bake 20 to 25 minutes or until center is set.

Side Dish Ingredients

  • 3 Tbsp sliced almonds
  • 1 (5-oz) pkg spring mix
  • ½ cup grape tomatoes, halved
  • 2 Tbsp lime juice
  • 2½ Tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toast nuts in a small skillet over medium heat until fragrant.
  2. Place spring mix and tomatoes in a bowl.
  3. Whisk together lime juice, oil, mustard, salt, and pepper. Drizzle over spring mix; toss. Sprinkle with nuts before serving.
