Bacon Meatballs with Tomato Sauce
Caesar Salad
Ingredients
- ¾ lb ground beef
- 3 slices bacon, cooked and crumbled
- 1 cup sliced mushrooms, finely chopped
- ½ onion, chopped
- ½ tsp garlic salt
- 1 large egg, lightly beaten
- 1 Tbsp olive oil
- 1¼ cups fire-roasted diced tomatoes
Instructions
- Combine beef, bacon, mushrooms, onion, garlic salt, and egg; shape into 1-inch meatballs.
- Cook meatballs in hot oil in a deep nonstick skillet over medium heat 4 minutes or until browned and no longer pink in centers, stirring often.
- Add tomatoes to skillet; cover and simmer 10 minutes or until meatballs are cooked through and thoroughly heated.
Side Dish Ingredients
- 3 cups chopped romaine lettuce
- 3 Tbsp creamy Caesar dressing
- 3 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Place lettuce in a bowl; add dressing and cheese. Toss.
