Ingredients

  • 3 russet potatoes (about 2¼ lb)
  • 1 (13-oz) pkg smoked turkey sausage link, sliced
  • 2 red bell peppers, chopped
  • 1 red onion, chopped
  • 2 Tbsp chopped chipotle peppers in adobo sauce
  • 1 Tbsp adobo sauce from can
  • 1½ cups shredded Mexican-blend cheese
  • 6 Tbsp sour cream
  • 2 green onions, sliced

Instructions

  1. Preheat broiler. Place potatoes on a microwave-safe plate; pierce each three to four times with a fork. Microwave at HIGH 10 to 15 minutes or until fork tender.
  2. Meanwhile, cook sausage, bell peppers, and onion in a large skillet coated with cooking spray over medium-high heat 7 to 8 minutes or until browned and vegetables are tender. Stir in chipotle peppers and adobo sauce.
  3. Cut potatoes in half lengthwise. Scoop out potato pulp, leaving ½-inch shells. Stir potato pulp into sausage mixture. Stuff mixture into shells; sprinkle with cheese. Broil 2 to 3 minutes or until cheese melts.
  4. Dollop with sour cream, and sprinkle with onions.

  • 2 Tbsp olive oil
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

  1. Steam green beans according to package directions. Toss with oil, garlic powder, salt, and pepper in a bowl.
