Ingredients

  • 2 pork tenderloins (2 lb), trimmed
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can petite-diced tomatoes
  • 1 (24-oz) jar fire-roasted tomato pasta sauce
  • 2 tsp Italian seasoning
  • ½ cup white wine (or use chicken broth)

Instructions

  1. Cut pork into 1-inch pieces; sprinkle lightly with salt and pepper.
  2. Cook pork, onion, and bell pepper in hot oil in a large skillet over medium-high heat until pork is browned and vegetables are tender.
  3. Stir in tomatoes, pasta sauce, Italian seasoning, and wine; bring to a boil, reduce heat, and simmer 15 minutes. Serve pork mixture over pasta.

  • 3 Tbsp butter
