Creole Red Beans and Rice

Ingredients

  • 2 Tbsp butter
  • 1 (10-oz) pkg frozen seasoning blend (diced onion, bell pepper and celery)
  • 1 Tbsp Creole seasoning
  • 3 (15-oz) cans light red kidney beans, drained and rinsed
  • 1 (32-oz) carton chicken broth
  • 2 cups long-grain white rice

Instructions

  1. Melt butter in a Dutch oven over medium-high heat. Add seasoning blend and Creole seasoning; cook 2 minutes.
  2. Stir in beans and broth. Bring to a boil; reduce heat, and simmer 20 minutes, stirring occasionally.
  3. Meanwhile, cook rice according to package directions. Serve red bean mixture over rice.

Side Dish Ingredients

  • 1 head broccoli, cut into florets
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp crushed red pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a large rimmed baking sheet. Bake 10 minutes or until broccoli is browned and tender.
