Crunchy Fish Dijon
Lemon Rice and Steamed AsparagusIngredients
- 1½ lb tilapia fillets
- 3 Tbsp Dijon mustard
- ½ tsp dried basil
- 30 round buttery crackers, finely crushed
Instructions
- Preheat oven to 425°F. Lightly season fish with salt and pepper.
- Stir together mustard and basil in a bowl. Brush mixture over fish; dredge in cracker crumbs to coat.
- Place on a lightly greased rack in a broiler pan. Bake 10 to 12 minutes or until fish flakes with a fork.

- 2 (8.5-oz) pouches microwavable basmati rice
- 1 tsp lemon zest
- 1 Tbsp lemon juice
- 2 (8-oz) pkg trimmed asparagus
Side Dish Instructions
- Heat rice according to package directions; spoon into a bowl. Add lemon zest and juice; toss.
- Steam asparagus according to package directions; season with salt and pepper to taste.
