Fork-and-Knife Spicy Italian Sausage Quesadillas

Ingredients

  • 1 (16-oz) jar salsa verde
  • ¼ cup chopped fresh cilantro
  • 1½ lb ground spicy Italian sausage
  • 1 cup sliced onion
  • 2 (8-oz) pkg shredded Monterey Jack cheese
  • 6 burrito-size flour tortillas
  • 3 Tbsp butter, divided

Instructions

  1. Heat salsa in a small skillet over medium heat; stir in cilantro.
  2. Meanwhile, cook sausage and onion in a large nonstick skillet over medium heat until sausage is browned and crumbly; drain and set aside. Wipe skillet clean.
  3. Divide cheese and sausage mixture over one side of each tortilla; fold tortillas in half.
  4. Melt 1 Tbsp butter in skillet over medium heat; add two filled tortillas, and cook 2 to 3 minutes per side or until cheese is melted and tortillas are browned.
  5. Repeat procedure with 2 Tbsp butter and remaining filled tortillas.
  6. Divide quesadillas among 6 plates; top with heated salsa mixture.
