Fork-and-Knife Spicy Italian Sausage Quesadillas
Southwest Salad
Ingredients
- 1 (16-oz) jar salsa verde
- ¼ cup chopped fresh cilantro
- 1½ lb ground spicy Italian sausage
- 1 cup sliced onion
- 2 (8-oz) pkg shredded Monterey Jack cheese
- 6 burrito-size flour tortillas
- 3 Tbsp butter, divided
Instructions
- Heat salsa in a small skillet over medium heat; stir in cilantro.
- Meanwhile, cook sausage and onion in a large nonstick skillet over medium heat until sausage is browned and crumbly; drain and set aside. Wipe skillet clean.
- Divide cheese and sausage mixture over one side of each tortilla; fold tortillas in half.
- Melt 1 Tbsp butter in skillet over medium heat; add two filled tortillas, and cook 2 to 3 minutes per side or until cheese is melted and tortillas are browned.
- Repeat procedure with 2 Tbsp butter and remaining filled tortillas.
- Divide quesadillas among 6 plates; top with heated salsa mixture.
