Blackberry-Glazed Pork Chops

Ingredients

  • 6 bone-in pork loin chops
  • 3 Tbsp olive oil, divided
  • 3 Tbsp sliced shallots
  • 2 tsp minced garlic
  • ⅓ cup red wine
  • 3 Tbsp balsamic vinegar
  • ½ cup seedless blackberry preserves

Instructions

  1. Season pork lightly with salt and pepper. Cook pork in 2 Tbsp hot oil in a large skillet over medium-high heat 4 minutes per side or until done. Remove from skillet; keep warm.
  2. Cook shallots and garlic in 1 Tbsp hot oil in same skillet 30 seconds. Add wine and vinegar; cook 1 minute.
  3. Stir in preserves; cook 1 minute or until smooth, stirring constantly. Drizzle over pork.

  • 2 (8.8-oz) pouches microwavable long-grain and wild rice
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Heat rice according to package directions .
  2. Steam green beans according to package directions; season to taste with salt and pepper.
