Spaghetti with Meatball Marinara

Ingredients

  • 12 oz whole-grain spaghetti
  • 1 (28-oz) can whole tomatoes, undrained and chopped
  • 1 Tbsp Italian seasoning
  • 1 tsp pepper, divided
  • ½ tsp salt, divided
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1½ lb lean ground beef
  • 1 large egg, lightly beaten
  • ¼ cup whole wheat panko breadcrumbs
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook spaghetti according to package directions.
  2. Meanwhile, cook tomatoes, Italian seasoning, ½ tsp pepper, ¼ tsp salt, and garlic in hot oil in a Dutch oven over medium heat. Bring to a boil.
  3. Gently combine beef, egg, breadcrumbs, ½ tsp pepper, and ¼ tsp salt; shape into meatballs.
  4. Brown meatballs in a large nonstick skillet 3 to 4 minutes; drain. Add meatballs to tomato sauce. Reduce heat, and simmer 15 minutes or until meatballs are done and sauce is slightly thickened.
  5. Serve over spaghetti; sprinkle with cheese.
