Salsa Verde Beef Tacos

Ingredients

  • ¾ lb ground beef
  • 1 cup salsa verde, divided
  • ½ Tbsp ground cumin
  • 6 corn tortillas
  • ½ (8-oz) pkg shredded lettuce
  • ½ (8-oz) pkg shredded colby-Jack cheese
  • ½ (8-oz) carton sour cream
  • ½ (8-oz) container guacamole

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain, and return to skillet. Stir in ½ cup salsa and cumin; cook until thickened.
  2. Meanwhile, heat tortillas according to package directions.
  3. Serve beef mixture in tortillas with lettuce, cheese, sour cream, gucamole, and remaining salsa.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable long-grain white rice
  • 2 Tbsp chopped fresh cilantro
  • 1 tsp lime zest
  • 1 (15-oz) can black beans, rinsed and drained

Side Dish Instructions

  1. Heat rice according to package directions; stir in cilantro and lime zest; season to taste with salt and pepper.
  2. Heat beans according to package directions.
