Hearty Vegetable Soup
Ingredients
- 1 lb plant-based ground beef
- 3 Tbsp vegetable oil, divided
- 2 cups chopped green bell pepper
- 1 cup chopped red onion
- 2 cups chopped green cabbage
- 2 cups frozen mixed vegetables
- 1 (14.5-oz) can stewed tomatoes
- 1 (32-oz) carton low-sodium beef broth
- 1 Tbsp Worcestershire sauce
- 1 bay leaf
- ¼ tsp pepper
- ¼ cup ketchup
Instructions
- Cook beef in 1 Tbsp hot oil in a Dutch oven coated with cooking spray over medium-high heat 2 minutes.
- Stir in bell pepper and onion; cook 4 minutes or until onion is tender.
- Stir in cabbage, mixed vegetables, tomatoes, broth, Worcestershire sauce, bay leaf, and pepper; bring to a boil.
- Reduce heat to medium; cover, and cook 15 minutes.
- Stir in ketchup and 2 Tbsp oil, and remove from heat. Let stand, covered, 10 minutes.
