Hearty Vegetable Soup

Ingredients

  • 1 lb plant-based ground beef
  • 3 Tbsp vegetable oil, divided
  • 2 cups chopped green bell pepper
  • 1 cup chopped red onion
  • 2 cups chopped green cabbage
  • 2 cups frozen mixed vegetables
  • 1 (14.5-oz) can stewed tomatoes
  • 1 (32-oz) carton low-sodium beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 bay leaf
  • ¼ tsp pepper
  • ¼ cup ketchup

Instructions

  1. Cook beef in 1 Tbsp hot oil in a Dutch oven coated with cooking spray over medium-high heat 2 minutes.
  2. Stir in bell pepper and onion; cook 4 minutes or until onion is tender.
  3. Stir in cabbage, mixed vegetables, tomatoes, broth, Worcestershire sauce, bay leaf, and pepper; bring to a boil.
  4. Reduce heat to medium; cover, and cook 15 minutes.
  5. Stir in ketchup and 2 Tbsp oil, and remove from heat. Let stand, covered, 10 minutes.
