Mini Gouda Meat Loaves
Roasted Green Beans and Mushrooms

Ingredients
- 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
- ¾ cup panko breadcrumbs
- 2 Tbsp minced garlic
- 2 Tbsp Worcestershire sauce
- 1 Tbsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- 2 large eggs
- 1½ lb lean ground beef
- 6 (0.7-oz) slices Gouda cheese
Instructions
- Preheat oven to 450°F. Microwave seasoning blend in a large bowl at HIGH 2 minutes or until tender. Stir in panko, garlic, Worcestershire, mustard, salt, pepper, and eggs. Add beef, and gently mix together using your hands.
- Shape mixture into 6 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
- Bake 15 minutes; top with cheese, tearing slices as needed. Bake 5 minutes longer or until no longer pink in centers.

- 2 (12-oz) pkg green beans
- 2 (8-oz) pkg sliced baby portobello mushrooms
- 2 Tbsp olive oil
- 2 Tbsp minced garlic
- ½ tsp kosher salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
- Bake 12 minutes or until vegetables are browned and tender.
