Lemon-Caper Shrimp
Sweet Pea Orzo
Ingredients
- 2 small cloves garlic, minced
- 1 Tbsp olive oil
- 1 lb peeled and deveined, large raw shrimp
- 1½ Tbsp capers
- 1½ Tbsp lemon juice
Instructions
- Sauté garlic in hot oil in a large skillet 1 minute. Add shrimp, capers, and lemon juice; sauté 3 minutes or until shrimp turn pink.

- 3 oz orzo (½ cup)
- 1 cup frozen green peas
- 2 small cloves garlic, minced
- 1 Tbsp olive oil
- ½ lemon
- ½ cup freshly grated Parmesan cheese
Side Dish Instructions
- Cook pasta according to package directions.
- Meanwhile, cook peas and garlic in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until peas are tender.
- Grate zest and squeeze juice from lemon. Add lemon zest, lemon juice, pasta, and cheese to peas in skillet; toss to combine.
