Florentine Pinwheel Steaks

Sour Cream Mashed Potatoes and Green Beans

Ingredients

  • ¾ lb flank steak
  • 3 slices mozzarella cheese
  • ½ (5-oz) pkg baby spinach
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp olive oil

Instructions

  1. Preheat grill or grill pan to medium-high heat. Pound steak to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Layer cheese, spinach, and basil on steak; roll up tightly from widest side.
  2. Secure steak with metal skewers at 1-inch intervals; brush steak with oil, and season lightly with salt and pepper.
  3. Grill, covered, 12 to 15 minutes or to desired doneness, turning occasionally. Let stand 10 minutes; remove skewers, and slice.

Side Dish Ingredients

  • ½ (32-oz) pkg refrigerated gluten-free mashed potatoes 
  • ¼ cup sour cream
  • 1 green onion, sliced
  • 1 (12-oz) pkg steam-in-bag green beans (or use green peas)
  • 1 Tbsp butter

Side Dish Instructions

  1. Heat half of potatoes according to package directions for stovetop. Stir in sour cream and onion.
  2. Steam beans according to package directions; toss with butter.
  3. Season potatoes and green beans with salt and pepper to taste.
