Slow Cooker Chicken Cacciatore

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 3-inch pieces
  • 1 red onion, sliced
  • 1 red or green bell pepper, sliced
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper

Instructions

  1. Sprinkle chicken lightly with salt and pepper. Place in a 4-quart slow cooker coated with cooking spray.
  2. Top with onion, bell pepper, tomatoes, garlic, and red pepper. Cover and cook on LOW 6 to 7 hours.

Side Dish Ingredients

  • ½ (12-oz) pkg gluten-free rotini (or other short pasta)
  • 1 Tbsp butter 

Side Dish Instructions

  1. Cook pasta according to package directions; toss with butter, and season with salt and pepper to taste.
