Slow Cooker Chicken Cacciatore
Buttery Rotini
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 3-inch pieces
- 1 red onion, sliced
- 1 red or green bell pepper, sliced
- 1 (14.5-oz) can fire-roasted diced tomatoes
- 2 cloves garlic, minced
- ¼ tsp crushed red pepper
Instructions
- Sprinkle chicken lightly with salt and pepper. Place in a 4-quart slow cooker coated with cooking spray.
- Top with onion, bell pepper, tomatoes, garlic, and red pepper. Cover and cook on LOW 6 to 7 hours.

- ½ (12-oz) pkg gluten-free rotini (or other short pasta)
- 1 Tbsp butter

- Cook pasta according to package directions; toss with butter, and season with salt and pepper to taste.
