Brussels Sprouts-Hash Eggs
Ingredients
- 8 slices center cut bacon
- 2 shallots, minced
- 1 garlic clove, minced
- 1 lb Brussels sprouts, thinly sliced
- 2 Tbsp apple cider vinegar
- 8 large eggs
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Remove bacon from skillet, reserving 2 Tbsp drippings in skillet. Crumble bacon.
- Add shallots and garlic to skillet, and cook 30 seconds. Add Brussels sprouts and vinegar; sauté 10 minutes until sprouts start to brown.
- Make 8 indentions in mixture in skillet and crack an egg into each indention. Cook 3 to 5 minutes or until eggs are cooked to desired doneness.
- Sprinkle with salt, pepper, and crumbled bacon.
