Brussels Sprouts-Hash Eggs

Ingredients

  • 8 slices center cut bacon
  • 2 shallots, minced
  • 1 garlic clove, minced
  • 1 lb Brussels sprouts, thinly sliced
  • 2 Tbsp apple cider vinegar
  • 8 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Remove bacon from skillet, reserving 2 Tbsp drippings in skillet. Crumble bacon.
  2. Add shallots and garlic to skillet, and cook 30 seconds. Add Brussels sprouts and vinegar; sauté 10 minutes until sprouts start to brown.
  3. Make 8 indentions in mixture in skillet and crack an egg into each indention. Cook 3 to 5 minutes or until eggs are cooked to desired doneness.
  4. Sprinkle with salt, pepper, and crumbled bacon.
