Creole Sausage Red Gravy
Cauliflower MashIngredients
- 1 (12-oz) pkg andouille sausage (see Note), cut into ½-inch pieces
- 2 Tbsp olive oil
- 1 cup chopped onion
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 1 tsp dried thyme
- ½ tsp Creole seasoning
- 1 (14.5-oz) can fire-roasted diced tomatoes, drained
- Cauliflower Mash (recipe follows)
Instructions
- Cook sausage in hot oil in a large skillet over medium heat 5 minutes or until browned.
- Add onion, bell pepper, garlic, thyme, and seasoning; cook 8 minutes, stirring often.
- Add tomatoes; cook 5 minutes or until sauce is thickened. Serve over Cauliflower Mash.
Side Dish Ingredients
- 1 (16-oz) bag frozen cauliflower florets
- 2 Tbsp olive oil
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower according to package directions; drain well.
- Stir in oil and pepper; mash with a potato masher to desired consistency.
