Creole Sausage Red Gravy

Ingredients

  • 1 (12-oz) pkg andouille sausage (see Note), cut into ½-inch pieces
  • 2 Tbsp olive oil
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • ½ tsp Creole seasoning
  • 1 (14.5-oz) can fire-roasted diced tomatoes, drained
  • Cauliflower Mash (recipe follows)

Instructions

  1. Cook sausage in hot oil in a large skillet over medium heat 5 minutes or until browned.
  2. Add onion, bell pepper, garlic, thyme, and seasoning; cook 8 minutes, stirring often.
  3. Add tomatoes; cook 5 minutes or until sauce is thickened. Serve over Cauliflower Mash.

Side Dish Ingredients

  • 1 (16-oz) bag frozen cauliflower florets
  • 2 Tbsp olive oil
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook cauliflower according to package directions; drain well.
  2. Stir in oil and pepper; mash with a potato masher to desired consistency.
