Pork Tenderloin with Lemon-Garlic Aioli

Ingredients

  • 1 (¾-lb) pork tenderloin
  • 1 Tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • ¼ cup mayonnaise
  • ½ Tbsp lemon juice
  • ¼ tsp minced garlic

Instructions

  1. Preheat grill or grill pan to medium-high heat. Rub pork with oil; sprinkle with salt and pepper.
  2. Grill pork, covered, 20 minutes or until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
  3. Stir together mayonnaise, lemon juice, and garlic; serve with pork.

  • 1 (16-oz) pkg frozen cauliflower florets, thawed
  • ¼ onion, chopped
  • 3 Tbsp cottage cheese
  • ½ cup shredded Cheddar cheese
  • 2 large eggs
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Preheat oven to 350°F. Combine cauliflower, onion, cottage cheese, Cheddar cheese, eggs, and salt in a large bowl; mix well.
  2. Spread cauliflower mixture in an 8-inch baking dish coated with cooking spray.
  3. Bake 40 to 45 minutes or until set and lightly browned.
