Teriyaki Chicken Bowls

Ingredients

  • 2 lb boneless, skinless chicken thighs, cubed
  • 2 Tbsp olive oil
  • 2 (12-oz) pkg stir-fry vegetables (broccoli, carrots, and snow peas)
  • 2 red bell peppers, sliced
  • 1 cup teriyaki sauce

Instructions

  1. Cook chicken in hot oil in a large skillet over medium-high heat 6 minutes or until browned.
  2. Add vegetables and bell peppers; cover and cook 8 minutes or until tender, stirring occasionally and adding water as needed to prevent sticking.
  3. Stir in sauce; cook 2 minutes or until thoroughly heated.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • ¼ cup toasted sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions. Stir in sesame seeds.
