Cheesy Barbecue Chicken

Buttered Green Beans and Mashed Potatoes

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ⅓ cup barbecue sauce
  • ½ cup shredded colby-Jack cheese
  • ½ (4.5-oz) pkg crumbled bacon

Instructions

  1. Preheat oven to 400°F. Cut chicken in half lengthwise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Lightly season chicken with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side or until browned.
  3. Transfer chicken to a parchment paper-lined rimmed baking sheet, and brush with barbecue sauce. Bake 10 minutes. Sprinkle each piece of chicken with cheese and bacon, and bake 3 minutes longer or until cheese is melted.

Side Dish Ingredients

  • 1 (12-oz) pkg steam-in-bag green beans
  • 2 Tbsp butter
  • 1 (24-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Steam beans according to package directions; toss with butter. Season with salt and pepper to taste.
  2. Heat potatoes according to package directions.
