Pesto-Roasted Pork

Ingredients

  • 1 pork tenderloin, trimmed (1 lb)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ¼ cup pesto

Instructions

  1. Preheat oven to 425°F. Sprinkle pork with salt and pepper. Cook in hot oil in a large cast-iron skillet over medium-high heat 5 minutes or until browned. Top with pesto.
  2. Bake 10 to 15 minutes or until a meat thermometer reads 145°F. Let stand 10 minutes before slicing .

  • ¾ lb green beans, trimmed
  • 1 Tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt, divided 
  • 1 (10-oz) pkg frozen riced cauliflower
  • ¼ cup freshly grated Parmesan cheese
  • 1½ Tbsp butter

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together beans, oil, garlic powder, and ⅛ tsp salt on a rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes or until browned and tender.
  3. Meanwhile, cook cauliflower according to package directions. Stir in cheese, butter, and ⅛ tsp salt.
