Pesto-Roasted Pork
Roasted Green Beans and Cheesy Cauliflower Grits
Ingredients
- 1 pork tenderloin, trimmed (1 lb)
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ¼ cup pesto
Instructions
- Preheat oven to 425°F. Sprinkle pork with salt and pepper. Cook in hot oil in a large cast-iron skillet over medium-high heat 5 minutes or until browned. Top with pesto.
- Bake 10 to 15 minutes or until a meat thermometer reads 145°F. Let stand 10 minutes before slicing .

- ¾ lb green beans, trimmed
- 1 Tbsp olive oil
- ½ tsp garlic powder
- ¼ tsp salt, divided
- 1 (10-oz) pkg frozen riced cauliflower
- ¼ cup freshly grated Parmesan cheese
- 1½ Tbsp butter
Side Dish Instructions
- Preheat oven to 425°F. Toss together beans, oil, garlic powder, and ⅛ tsp salt on a rimmed baking sheet; spread in a single layer.
- Bake 15 minutes or until browned and tender.
- Meanwhile, cook cauliflower according to package directions. Stir in cheese, butter, and ⅛ tsp salt.
