Lemon-Dill Rice Pilaf
Ingredients
- 2 Tbsp butter
- 1 cup chopped onion
- 3 cloves garlic, minced
- 2 cups long-grain white rice
- 1 (32-oz) carton chicken broth
- 3 Tbsp minced fresh dill
- 2 tsp lemon zest
- ½ cup sliced almonds, toasted
Instructions
- Melt butter in a large saucepan over medium-high heat. Add onion and garlic; cook, stirring often, until onion is tender. Add rice, and cook, stirring frequently, 2 minutes.
- Add broth; bring to a boil, reduce heat, and simmer 20 minutes or until rice is tender. Fluff with a fork, and stir in dill and lemon zest. Season with salt and pepper to taste, and stir in toasted almonds.
