Cream Cheese and Strawberry-Stuffed French Toast

Ingredients

  • 1 cup heavy cream
  • 1 cup sugar
  • ½ cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1 (8-oz) block cream cheese, softened
  • ½ cup strawberry preserves
  • 2 (6-count) pkg frozen extra-thick French toast, thawed
  • 3 Tbsp butter, divided
  • 1½ cups sliced strawberries

Instructions

  1. Cook cream, sugar, and peanut butter in a small saucepan over medium heat, whisking constantly, until sugar is dissolved and mixture is smooth. Stir in vanilla. Set aside to cool slightly.
  2. Stir together cream cheese and strawberry preserves. Spread mixture over one side of 6 slices French toast. Top each with remaining French toast to make sandwiches.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add 2 French toast sandwiches, and cook, 3 to 4 minutes per side or until browned and crisp. Repeat with remaining butter and sandwiches.
  4. Divide sandwiches among 6 plates. Top each with peanut butter syrup and sliced strawberries.
