Cream Cheese and Strawberry-Stuffed French Toast
Ingredients
- 1 cup heavy cream
- 1 cup sugar
- ½ cup creamy peanut butter
- 1 tsp vanilla extract
- 1 (8-oz) block cream cheese, softened
- ½ cup strawberry preserves
- 2 (6-count) pkg frozen extra-thick French toast, thawed
- 3 Tbsp butter, divided
- 1½ cups sliced strawberries
Instructions
- Cook cream, sugar, and peanut butter in a small saucepan over medium heat, whisking constantly, until sugar is dissolved and mixture is smooth. Stir in vanilla. Set aside to cool slightly.
- Stir together cream cheese and strawberry preserves. Spread mixture over one side of 6 slices French toast. Top each with remaining French toast to make sandwiches.
- Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add 2 French toast sandwiches, and cook, 3 to 4 minutes per side or until browned and crisp. Repeat with remaining butter and sandwiches.
- Divide sandwiches among 6 plates. Top each with peanut butter syrup and sliced strawberries.
