Smashed Avocado and Bacon Waffles

Ingredients
- 10 slices bacon, chopped
- 3 avocados
- 2 Tbsp chopped fresh basil
- 1 Tbsp fresh lemon juice
- 6 Tbsp butter, divided
- 1 (12-count) pkg frozen Belgian-style waffles, thawed
- 3 Roma tomatoes, thinly sliced
- ¼ cup fresh basil leaves
- Balsamic glaze (optional)
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels .
- Meanwhile, mash avocados with a fork to desired consistency; stir in chopped basil and lemon juice. Season with salt and pepper to taste.
- Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat; add 2 waffles, and cook 3 to 4 minutes per side or until browned and crisp. Repeat with remaining butter and waffles.
- Spread avocado mixture over waffles. Top with sliced tomatoes, crumbled bacon, and basil leaves. Drizzle with balsamic glaze, if desired.
