Smashed Avocado and Bacon Waffles

Ingredients

  • 10 slices bacon, chopped
  • 3 avocados
  • 2 Tbsp chopped fresh basil
  • 1 Tbsp fresh lemon juice
  • 6 Tbsp butter, divided
  • 1 (12-count) pkg frozen Belgian-style waffles, thawed
  • 3 Roma tomatoes, thinly sliced
  • ¼ cup fresh basil leaves
  • Balsamic glaze (optional)

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels .
  2. Meanwhile, mash avocados with a fork to desired consistency; stir in chopped basil and lemon juice. Season with salt and pepper to taste.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat; add 2 waffles, and cook 3 to 4 minutes per side or until browned and crisp. Repeat with remaining butter and waffles.
  4. Spread avocado mixture over waffles. Top with sliced tomatoes, crumbled bacon, and basil leaves. Drizzle with balsamic glaze, if desired.
