Hasselback Two Potato Casserole
Ingredients
- 6 Tbsp butter, melted
- 6 Tbsp olive oil
- 2 tsp salt
- 1 tsp pepper
- 1 Tbsp minced fresh thyme
- 3 lb sweet potatoes, peeled and cut into ¼-inch-thick slices
- 3 lb Yukon Gold potatoes, peeled, and cut into ⅛-inch-thick slices
- 1 onion, thinly sliced
Instructions
- Preheat oven to 375°F. Stir together melted butter, oil, salt, pepper, and thyme in a large bowl. Add potatoes, toss.
- Arrange potato slices vertically in a lightly greased 3-quart baking dish placing onions in between potato slices.
- Brush tops of potatoes with remaining butter mixture. Cover and bake 1 hour or until potatoes are almost tender.
- Uncover and bake 30 minutes longer or until potatoes are browned.
