Hasselback Two Potato Casserole

Ingredients

  • 6 Tbsp butter, melted
  • 6 Tbsp olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • 1 Tbsp minced fresh thyme
  • 3 lb sweet potatoes, peeled and cut into ¼-inch-thick slices
  • 3 lb Yukon Gold potatoes, peeled, and cut into ⅛-inch-thick slices
  • 1 onion, thinly sliced

Instructions

  1. Preheat oven to 375°F. Stir together melted butter, oil, salt, pepper, and thyme in a large bowl. Add potatoes, toss.
  2. Arrange potato slices vertically in a lightly greased 3-quart baking dish placing onions in between potato slices.
  3. Brush tops of potatoes with remaining butter mixture. Cover and bake 1 hour or until potatoes are almost tender.
  4. Uncover and bake 30 minutes longer or until potatoes are browned.
