Brown Sugar Pork Roast

Ingredients
- 1 Tbsp packed brown sugar
- ½ tsp salt
- ½ tsp pepper
- 1 (5-lb) boneless pork shoulder roast
- 2 cups chopped onion
- 4 cloves garlic
- 2 bay leaves
- 1 cup low-sodium chicken broth
- ½ cup white wine vinegar
Instructions
- Stir together brown sugar, salt, and pepper; rub mixture over pork.
- Transfer pork to a 5- to 7-quart slow cooker. Add onion and remaining ingredients.
- Cover, and cook on LOW 10 to 12 hours or until pork is very tender.
- (Reserve 3 cups shredded pork for Mac and Cheese with Shredded Pork recipe) Serve remaining pork with Turnip Greens Salad recipe.
Side Dish Ingredients
- ¼ cup mayonnaise
- ¼ cup apple cider vinegar
- 1 tsp dry mustard
- 1 tsp sugar
- ½ tsp salt
- ½ tsp pepper
- 6 cups chopped fresh turnip greens
- 1 cup shaved carrots
- 1 large apple, thinly sliced
- 2½ lb potatoes, cubed
- 3 Tbsp olive oil
- 1 Tbsp Greek seasoning
Side Dish Instructions
- Preheat oven to 400°F. Whisk together mayonnaise, vinegar, mustard, sugar, salt, and pepper in a large bowl. Add greens, carrots, and apple; toss gently to coat. Refrigerate 30 minutes.
- Toss together potatoes, oil, and seasoning on a baking sheet; spread in a single layer. Bake 20 to 30 minutes or until tender and golden brown.
