Brown Sugar Pork Roast

Ingredients

  • 1 Tbsp packed brown sugar
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (5-lb) boneless pork shoulder roast
  • 2 cups chopped onion
  • 4 cloves garlic
  • 2 bay leaves
  • 1 cup low-sodium chicken broth
  • ½ cup white wine vinegar

Instructions

  1. Stir together brown sugar, salt, and pepper; rub mixture over pork.
  2. Transfer pork to a 5- to 7-quart slow cooker. Add onion and remaining ingredients.
  3. Cover, and cook on LOW 10 to 12 hours or until pork is very tender.
  4. (Reserve 3 cups shredded pork for Mac and Cheese with Shredded Pork recipe) Serve remaining pork with Turnip Greens Salad recipe.

Side Dish Ingredients

  • ¼ cup mayonnaise
  • ¼ cup apple cider vinegar
  • 1 tsp dry mustard
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • 6 cups chopped fresh turnip greens
  • 1 cup shaved carrots
  • 1 large apple, thinly sliced
  • 2½ lb potatoes, cubed
  • 3 Tbsp olive oil
  • 1 Tbsp Greek seasoning

Side Dish Instructions

  1. Preheat oven to 400°F. Whisk together mayonnaise, vinegar, mustard, sugar, salt, and pepper in a large bowl. Add greens, carrots, and apple; toss gently to coat. Refrigerate 30 minutes.
  2. Toss together potatoes, oil, and seasoning on a baking sheet; spread in a single layer. Bake 20 to 30 minutes or until tender and golden brown.
