Simple Chicken

Smashed Sweet Potatoes and Broccoli

Ingredients

  • 2 onions, chopped
  • 4 stalks celery, cut into 1-inch pieces
  • 2 Tbsp olive oil
  • 1 Tbsp pepper
  • 1 tsp salt
  • 1 tsp smoked paprika (or use regular)
  • 1 tsp garlic powder
  • 2 (4-lb) whole chickens, giblets removed

Instructions

  1. Place onions and celery in a 5- to 7-quart slow cooker.
  2. Stir together oil, pepper, salt, paprika, and garlic powder in a small bowl; rub over chickens.
  3. Place chickens over onions in cooker.
  4. Cover, and cook on LOW 8 to 10 hours or until chicken is cooked through.
  5. (Shred and reserve 4 cups chicken for Quick Chicken and Dumplings recipe.) Serve remaining chicken with Smashed Sweet Potatoes and Broccoli recipe.

Side Dish Ingredients

  • 2 lb sweet potatoes, peeled and diced
  • 1 clove garlic, minced
  • 3 Tbsp butter
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 2 (12-oz) pkg fresh broccoli florets

Side Dish Instructions

  1. Cook sweet potatoes in boiling water to cover in a large saucepan 10 minutes or until tender; drain and return to pan.
  2. Stir in garlic, butter, and ⅛ tsp each salt and pepper; mash to desired consistency.
  3. Steam broccoli according to package directions; sprinkle with ⅛ tsp each salt and pepper.
