Simple Chicken
Smashed Sweet Potatoes and BroccoliIngredients
- 2 onions, chopped
- 4 stalks celery, cut into 1-inch pieces
- 2 Tbsp olive oil
- 1 Tbsp pepper
- 1 tsp salt
- 1 tsp smoked paprika (or use regular)
- 1 tsp garlic powder
- 2 (4-lb) whole chickens, giblets removed
Instructions
- Place onions and celery in a 5- to 7-quart slow cooker.
- Stir together oil, pepper, salt, paprika, and garlic powder in a small bowl; rub over chickens.
- Place chickens over onions in cooker.
- Cover, and cook on LOW 8 to 10 hours or until chicken is cooked through.
- (Shred and reserve 4 cups chicken for Quick Chicken and Dumplings recipe.) Serve remaining chicken with Smashed Sweet Potatoes and Broccoli recipe.
Side Dish Ingredients
- 2 lb sweet potatoes, peeled and diced
- 1 clove garlic, minced
- 3 Tbsp butter
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 2 (12-oz) pkg fresh broccoli florets
Side Dish Instructions
- Cook sweet potatoes in boiling water to cover in a large saucepan 10 minutes or until tender; drain and return to pan.
- Stir in garlic, butter, and ⅛ tsp each salt and pepper; mash to desired consistency.
- Steam broccoli according to package directions; sprinkle with ⅛ tsp each salt and pepper.
