Easy Greek Chicken

Tomato and Rice Salad

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ Tbsp Greek seasoning
  • 2 Tbsp olive oil

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with seasoning.
  2. Cook chicken in hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.

Side Dish Ingredients

  • ¾ cup long-grain white rice
  • 1 cup grape tomatoes, halved
  • ½ cucumber, thinly sliced
  • ¼ cup olive-oil vinaigrette
  • ¼ cup crumbled feta cheese

Side Dish Instructions

  1. Cook rice according to package directions; toss with tomatoes, cucumber, and vinaigrette. Season with salt and pepper to taste. Sprinkle with cheese.
