Easy Greek Chicken
Tomato and Rice SaladIngredients
- ¾ lb boneless, skinless chicken breasts
- ½ Tbsp Greek seasoning
- 2 Tbsp olive oil
Instructions
- Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with seasoning.
- Cook chicken in hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.
Side Dish Ingredients
- ¾ cup long-grain white rice
- 1 cup grape tomatoes, halved
- ½ cucumber, thinly sliced
- ¼ cup olive-oil vinaigrette
- ¼ cup crumbled feta cheese
Side Dish Instructions
- Cook rice according to package directions; toss with tomatoes, cucumber, and vinaigrette. Season with salt and pepper to taste. Sprinkle with cheese.
