Pork Chops with Mustard Butter
Mashed Sweet Potatoes and Steamed PeasIngredients
- 2 (1-inch-thick) boneless pork loin chops
- 2 Tbsp butter, softened
- 1 Tbsp chopped fresh parsley
- 1 Tbsp Dijon mustard
- ⅛ tsp cayenne pepper
Instructions
- Preheat oven to 425°F. Season pork chops lightly with salt and pepper; place on a foil-lined rimmed baking sheet. Bake 10 minutes.
- Stir together butter, parsley, mustard, and cayenne; dollop mixture over pork.
- Bake 10 minutes or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 5 minutes before serving.

- ¾ lb sweet potatoes, peeled and cubed
- 2 Tbsp butter
- 1 Tbsp sugar
- ¼ tsp ground cinnamon
- ½ (12-oz) pkg frozen green peas
Side Dish Instructions
- Cook potatoes in boiling water to cover in a large saucepan until tender; drain and mash to desired consistency with butter, sugar, and cinnamon. Season with salt and pepper to taste.
- Steam peas according to package directions.
