Pork Chops with Mustard Butter

Ingredients

  • 2 (1-inch-thick) boneless pork loin chops
  • 2 Tbsp butter, softened
  • 1 Tbsp chopped fresh parsley
  • 1 Tbsp Dijon mustard
  • ⅛ tsp cayenne pepper

Instructions

  1. Preheat oven to 425°F. Season pork chops lightly with salt and pepper; place on a foil-lined rimmed baking sheet. Bake 10 minutes.
  2. Stir together butter, parsley, mustard, and cayenne; dollop mixture over pork.
  3. Bake 10 minutes or until a meat thermometer inserted into thickest portion reads 145°F. Let stand 5 minutes before serving.

  • ¾ lb sweet potatoes, peeled and cubed
  • 2 Tbsp butter
  • 1 Tbsp sugar
  • ¼ tsp ground cinnamon
  • ½ (12-oz) pkg frozen green peas

Side Dish Instructions

  1. Cook potatoes in boiling water to cover in a large saucepan until tender; drain and mash to desired consistency with butter, sugar, and cinnamon. Season with salt and pepper to taste.
  2. Steam peas according to package directions.
