Mozzarella Chicken

Arugula and Tomato Salad

Ingredients

  • 1½ cups shredded mozzarella cheese (or use Parmesan)
  • ¼ cup mayonnaise 
  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp gluten-free Ranch seasoning mix 
  • 1 Tbsp olive oil

Instructions

  1. Combine cheese and mayonnaise in a bowl.
  2. Sprinkle chicken with seasoning mix. Cook chicken, in batches, in ½ Tbsp hot oil per batch in a large skillet over medium-high heat 6 minutes.
  3. Turn chicken over, and top with cheese mixture; cook 6 minutes until chicken is done and cheese is melted.

Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • ¼ tsp honey
  • 2 (5-oz) pkg baby arugula
  • 1 cup halved grape tomatoes

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, and desired amount of salt and pepper in a large bowl. Add arugula and tomatoes; toss.
