Pork and Green Bean Stir-Fry

Ingredients

  • 1½ lb pork tenderloins, cut into 1-inch pieces
  • 2 Tbsp olive oil, divided
  • ½ lb green beans, trimmed and cut into bite-size pieces
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can chicken broth
  • ¼ cup soy sauce
  • 2 Tbsp cornstarch

Instructions

  1. Cook pork in 1 Tbsp hot oil in a large skillet over medium-high heat until browned; remove from skillet.
  2. Sauté green beans, bell pepper, and garlic in 1 Tbsp hot oil in skillet 5 to 6 minutes or just until crisp-tender.
  3. Stir together broth and remaining ingredients; add to skillet with pork. Bring to a boil, reduce heat, and simmer until sauce is thickened, stirring often. Serve over rice with additional soy sauce, if desired.

Side Dish Ingredients

  • 2 (8.8-oz) pouches whole-grain brown rice (or use any microwavable rice)
  • 1 (16-oz) container pineapple chunks

Side Dish Instructions

  1. Cook rice according to microwave package directions. Serve with stir-fry.
  2. Cut up pineapple into bite-size pieces.
