Pork and Green Bean Stir-Fry
Rice and Pineapple
Ingredients
- 1½ lb pork tenderloins, cut into 1-inch pieces
- 2 Tbsp olive oil, divided
- ½ lb green beans, trimmed and cut into bite-size pieces
- 1 red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 (14.5-oz) can chicken broth
- ¼ cup soy sauce
- 2 Tbsp cornstarch
Instructions
- Cook pork in 1 Tbsp hot oil in a large skillet over medium-high heat until browned; remove from skillet.
- Sauté green beans, bell pepper, and garlic in 1 Tbsp hot oil in skillet 5 to 6 minutes or just until crisp-tender.
- Stir together broth and remaining ingredients; add to skillet with pork. Bring to a boil, reduce heat, and simmer until sauce is thickened, stirring often. Serve over rice with additional soy sauce, if desired.
Side Dish Ingredients
- 2 (8.8-oz) pouches whole-grain brown rice (or use any microwavable rice)
- 1 (16-oz) container pineapple chunks
Side Dish Instructions
- Cook rice according to microwave package directions. Serve with stir-fry.
- Cut up pineapple into bite-size pieces.
