Chicken, Bacon, and Ranch Quesadillas

Ingredients

  • ½ (22-oz) pkg frozen diced cooked chicken breasts, thawed
  • ½ (2.5-oz) pkg fully cooked bacon, chopped
  • 1 cup shredded colby-Jack cheese
  • ½ (16-oz) bottle Ranch dressing, divided
  • 3 burrito-size flour tortillas

Instructions

  1. Stir together chicken, bacon, cheese, and ⅓ cup dressing. Spread over one side of each tortilla. Fold tortillas in half.
  2. Cook quesadillas, in two batches, in a nonstick skillet coated with cooking spray over medium heat 3 to 4 minutes per side or until tortillas are lightly browned and cheese is melted. Cut into wedges, and serve with additional Ranch dressing.

Side Dish Ingredients

  • ½ (11-oz) pkg yellow corn tortilla chips
  • ½ (8-oz) container guacamole

Side Dish Instructions

  1. Serve desired amount of chips and guacamole on each plate.
