Tortellini Beef Soup

Ingredients

  • 1 lb ground beef (or use ground turkey)
  • 1 (9-oz) pkg refrigerated four-cheese tortellini
  • 2 (14.5-oz) cans diced tomatoes with Italian seasoning
  • 1 (32-oz) carton chicken broth
  • ½ (6-oz) pkg baby spinach

Instructions

  1. Cook beef in a large saucepan over medium heat until browned and crumbly; drain and return to pan.
  2. Stir in tortellini, tomatoes, and broth. Bring to a boil, reduce heat, and simmer 5 minutes. Gradually stir in spinach until wilted.
  3. Store remaining soup in refrigerator.

  • 1 (8.5-oz) pkg corn muffin mix

  1. Preheat oven to 400°F. Prepare and bake corn muffins according to package directions.
