Tortellini Beef Soup
Sweet Cornbread MuffinsIngredients
- 1 lb ground beef (or use ground turkey)
- 1 (9-oz) pkg refrigerated four-cheese tortellini
- 2 (14.5-oz) cans diced tomatoes with Italian seasoning
- 1 (32-oz) carton chicken broth
- ½ (6-oz) pkg baby spinach
Instructions
- Cook beef in a large saucepan over medium heat until browned and crumbly; drain and return to pan.
- Stir in tortellini, tomatoes, and broth. Bring to a boil, reduce heat, and simmer 5 minutes. Gradually stir in spinach until wilted.
- Store remaining soup in refrigerator.

- Preheat oven to 400°F. Prepare and bake corn muffins according to package directions.
