Wasa Gluten Free Crispbread

Ingredients

  • ½ cup chopped walnuts, divided
  • 2 Tbsp orange juice
  • 1½ Tbsp apple cider vinegar
  • ½ Tbsp maple syrup
  • ½ tsp Dijon mustard
  • 3 Tbsp olive oil
  • 1 (5-oz) pkg spinach
  • 2 oranges, peeled and sectioned
  • ½ (2.5-oz) pkg fully cooked bacon, chopped
  • 1½ cups chopped rotisserie chicken (or use cooked chicken or turkey)

Instructions

  1. Process ¼ cup nuts, orange juice, vinegar, syrup, and mustard in a food processor until smooth. With processor running, gradually add oil through food chute, processing until blended.
  2. Divide spinach among 3 plates. Top with oranges, bacon, chicken, and ¼ cup nuts. Drizzle with vinaigrette.
