Ingredients
- ½ cup chopped walnuts, divided
- 2 Tbsp orange juice
- 1½ Tbsp apple cider vinegar
- ½ Tbsp maple syrup
- ½ tsp Dijon mustard
- 3 Tbsp olive oil
- 1 (5-oz) pkg spinach
- 2 oranges, peeled and sectioned
- ½ (2.5-oz) pkg fully cooked bacon, chopped
- 1½ cups chopped rotisserie chicken (or use cooked chicken or turkey)
Instructions
- Process ¼ cup nuts, orange juice, vinegar, syrup, and mustard in a food processor until smooth. With processor running, gradually add oil through food chute, processing until blended.
- Divide spinach among 3 plates. Top with oranges, bacon, chicken, and ¼ cup nuts. Drizzle with vinaigrette.
