Smothered Pork Chops
Brown Rice and Steamed Green Beans
Ingredients
- 1½ lb boneless pork chops
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 1 Tbsp paprika
- ¾ cup whole wheat flour
- 3 Tbsp olive oil
- 2 onions, sliced
- 1 Tbsp chopped fresh thyme
- 1 (14.5-oz) can low-sodium chicken broth
- ½ cup milk
Instructions
- Sprinkle pork with ½ tsp each salt and pepper; combine paprika and flour. Dredge pork in flour mixture, shaking off excess. Reserve 3 Tbsp remaining flour mixture.
- Cook pork in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet, and keep warm.
- Add onions and thyme to skillet. Sauté 8 minutes or until onion is tender; stir in reserved flour, and cook 1 minute.
- Whisk in broth and ¼ tsp each salt and pepper; cook 10 minutes. Add milk and pork; cook 5 minutes or until sauce is thickened and pork is done.
Side Dish Ingredients
- 1½ cups brown rice
- 2 lb green beans, trimmed
- 2 Tbsp butter
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions.
- Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender. Toss with butter, salt, and pepper before serving.
