Smothered Pork Chops

Ingredients

  • 1½ lb boneless pork chops
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 1 Tbsp paprika
  • ¾ cup whole wheat flour
  • 3 Tbsp olive oil
  • 2 onions, sliced
  • 1 Tbsp chopped fresh thyme
  • 1 (14.5-oz) can low-sodium chicken broth
  • ½ cup milk

Instructions

  1. Sprinkle pork with ½ tsp each salt and pepper; combine paprika and flour. Dredge pork in flour mixture, shaking off excess. Reserve 3 Tbsp remaining flour mixture.
  2. Cook pork in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet, and keep warm.
  3. Add onions and thyme to skillet. Sauté 8 minutes or until onion is tender; stir in reserved flour, and cook 1 minute.
  4. Whisk in broth and ¼ tsp each salt and pepper; cook 10 minutes. Add milk and pork; cook 5 minutes or until sauce is thickened and pork is done.

  • 1½ cups brown rice
  • 2 lb green beans, trimmed
  • 2 Tbsp butter
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Steam green beans in a steamer basket over simmering water 5 minutes or until crisp-tender. Toss with butter, salt, and pepper before serving.
