Lamb Kofta Bowls with Tzatziki Sauce

Ingredients

  • 1½ lb ground lamb (or use ground beef)
  • 2 tsp garam masala
  • 2 cloves garlic, minced
  • 1 tsp salt, divided
  • ½ tsp pepper, divided
  • 2 (7.6-oz) pkg whole-grain couscous
  • ¼ cup chopped fresh mint, divided
  • 1 (5.3-oz) carton plain Greek yogurt
  • ½ organic English cucumber, halved, seeded, and finely chopped
  • 1 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • 1 pint organic grape tomatoes, halved

Instructions

  1. Preheat broiler. Combine lamb, garam masala, garlic, ½ tsp salt, and ¼ tsp pepper in a bowl; shape into 12 oblong meatballs.
  2. Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are done.
  3. Meanwhile, cook couscous according to package directions; stir in 2 Tbsp mint.
  4. Stir together yogurt, cucumber, 2 Tbsp mint, lemon zest, lemon juice, ½ tsp salt, and ¼ tsp pepper in a small bowl.
  5. Divide couscous among 6 bowls; top with meatballs, tomatoes, and yogurt sauce.

  1. Cut pitas into wedges.
