Lamb Kofta Bowls with Tzatziki Sauce

Ingredients
- 1½ lb ground lamb (or use ground beef)
- 2 tsp garam masala
- 2 cloves garlic, minced
- 1 tsp salt, divided
- ½ tsp pepper, divided
- 2 (7.6-oz) pkg whole-grain couscous
- ¼ cup chopped fresh mint, divided
- 1 (5.3-oz) carton plain Greek yogurt
- ½ organic English cucumber, halved, seeded, and finely chopped
- 1 tsp lemon zest
- 1 Tbsp fresh lemon juice
- 1 pint organic grape tomatoes, halved
Instructions
- Preheat broiler. Combine lamb, garam masala, garlic, ½ tsp salt, and ¼ tsp pepper in a bowl; shape into 12 oblong meatballs.
- Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are done.
- Meanwhile, cook couscous according to package directions; stir in 2 Tbsp mint.
- Stir together yogurt, cucumber, 2 Tbsp mint, lemon zest, lemon juice, ½ tsp salt, and ¼ tsp pepper in a small bowl.
- Divide couscous among 6 bowls; top with meatballs, tomatoes, and yogurt sauce.
