Eggs Baked in Spicy Tomato Sauce

Ingredients

  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp crushed red pepper
  • 1 (28-oz) can BPA-free organic crushed tomatoes
  • ½ tsp salt
  • 12 large eggs
  • 1 Tbsp chopped fresh thyme

Instructions

  1. Preheat oven to 375°F. Sauté onion in hot oil in a large ovenproof skillet over medium heat 6 minutes or until tender, stirring occasionally.
  2. Stir in garlic and red pepper; cook 2 minutes, stirring often. Add tomatoes and salt. Bring to a simmer; cook 5 minutes or until slightly thickened.
  3. Spread tomato mixture in an even layer; crack eggs over tomato sauce in a single layer.
  4. Transfer to oven; bake 8 minutes or until eggs are cooked to desired doneness. Sprinkle with thyme.
  5. Serve eggs and sauce over Creamy Spinach-Parmesan Grits recipe.

  • 1 (14.5-oz) can low-sodium chicken broth
  • 2¼ cups milk
  • 1 cup stone-ground grits
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup freshly grated Parmesan cheese
  • 1 (5-oz) pkg organic baby spinach, coarsely chopped

Side Dish Instructions

  1. Bring broth and milk to a boil in a saucepan; gradually whisk in grits, salt, and pepper.
  2. Reduce heat to low; simmer, stirring occasionally, 20 to 40 minutes or until grits are creamy and liquid is absorbed. Add more liquid, if needed.
  3. Add cheese and half of spinach, stirring until spinach is wilted. Add remaining spinach, stirring until wilted.
