Eggs Baked in Spicy Tomato Sauce
Creamy Spinach-Parmesan GritsIngredients
- 1 onion, chopped
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp crushed red pepper
- 1 (28-oz) can BPA-free organic crushed tomatoes
- ½ tsp salt
- 12 large eggs
- 1 Tbsp chopped fresh thyme
Instructions
- Preheat oven to 375°F. Sauté onion in hot oil in a large ovenproof skillet over medium heat 6 minutes or until tender, stirring occasionally.
- Stir in garlic and red pepper; cook 2 minutes, stirring often. Add tomatoes and salt. Bring to a simmer; cook 5 minutes or until slightly thickened.
- Spread tomato mixture in an even layer; crack eggs over tomato sauce in a single layer.
- Transfer to oven; bake 8 minutes or until eggs are cooked to desired doneness. Sprinkle with thyme.
- Serve eggs and sauce over Creamy Spinach-Parmesan Grits recipe.
Side Dish Ingredients
- 1 (14.5-oz) can low-sodium chicken broth
- 2¼ cups milk
- 1 cup stone-ground grits
- ½ tsp salt
- ½ tsp pepper
- ½ cup freshly grated Parmesan cheese
- 1 (5-oz) pkg organic baby spinach, coarsely chopped
Side Dish Instructions
- Bring broth and milk to a boil in a saucepan; gradually whisk in grits, salt, and pepper.
- Reduce heat to low; simmer, stirring occasionally, 20 to 40 minutes or until grits are creamy and liquid is absorbed. Add more liquid, if needed.
- Add cheese and half of spinach, stirring until spinach is wilted. Add remaining spinach, stirring until wilted.
