Jalapeño-Lime Black Beans
Sweet Potato "Pappardelle" and Cucumber Wedges
Ingredients
- ¾ cup chopped green bell pepper
- ½ cup chopped onion
- 1 clove garlic, minced
- 2 Tbsp olive oil
- 1 cup vegetable broth
- 1 (15-oz) can no-salt-added black beans, drained and rinsed
- 1 jalapeño pepper, minced (see Note)
- 1 Tbsp lime juice
- ⅛ tsp salt
- ½ lime, cut into wedges
Instructions
- Sauté bell pepper and onion in 1 tsp hot oil in a Dutch oven over medium-high heat 4 minutes. Add garlic; sauté 15 seconds.
- Stir in broth and beans; bring to boil. Reduce heat to medium, cover, and cook 10 minutes or until vegetables are tender.
- Whisk together 5 tsp oil, jalapeño, lime juice, and salt in a small bowl. Divide bean mixture among 6 plates; drizzle with oil mixture. Serve with lime.
Side Dish Ingredients
- ½ lb sweet potatoes, peeled
- 1 Tbsp extra virgin olive oil
- ½ tsp pepper
- 1 cucumber, cut into spears
- ⅛ tsp salt
Side Dish Instructions
- Using a vegetable peeler, shave potatoes into ribbons.
- Microwave potatoes, covered, at HIGH power 5 to 7 minutes or until tender. Toss with oil and pepper.
- Sprinkle cucumber with salt. Serve potatoes and cucumbers alongside beans.
