Jalapeño-Lime Black Beans

Sweet Potato "Pappardelle" and Cucumber Wedges

Ingredients

  • ¾ cup chopped green bell pepper
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • 2 Tbsp olive oil
  • 1 cup vegetable broth
  • 1 (15-oz) can no-salt-added black beans, drained and rinsed
  • 1 jalapeño pepper, minced (see Note)
  • 1 Tbsp lime juice
  • ⅛ tsp salt
  • ½ lime, cut into wedges

Instructions

  1. Sauté bell pepper and onion in 1 tsp hot oil in a Dutch oven over medium-high heat 4 minutes. Add garlic; sauté 15 seconds.
  2. Stir in broth and beans; bring to boil. Reduce heat to medium, cover, and cook 10 minutes or until vegetables are tender.
  3. Whisk together 5 tsp oil, jalapeño, lime juice, and salt in a small bowl. Divide bean mixture among 6 plates; drizzle with oil mixture. Serve with lime.

Side Dish Ingredients

  • ½ lb sweet potatoes, peeled
  • 1 Tbsp extra virgin olive oil
  • ½ tsp pepper
  • 1 cucumber, cut into spears
  • ⅛ tsp salt

Side Dish Instructions

  1. Using a vegetable peeler, shave potatoes into ribbons.
  2. Microwave potatoes, covered, at HIGH power 5 to 7 minutes or until tender. Toss with oil and pepper.
  3. Sprinkle cucumber with salt. Serve potatoes and cucumbers alongside beans.
