One-Dish Dinner
Tex-Mex Fried "Rice" Bowls

Ingredients
- 2 (12-oz) pkg frozen cauliflower rice
- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 3 Tbsp olive oil
- 1 red bell pepper, chopped
- 1 tsp chili powder
- ½ tsp salt
- ½ tsp pepper
- 1 tomato, chopped
- 4 green onions, sliced
- 1 cup crumbled cotija cheese (or use feta cheese)
- 1 cup cubed avocado
Instructions
- Cook cauliflower according to package directions; cool slightly, and squeeze dry using paper towels.
- Meanwhile, cook chicken in hot oil in a large skillet over medium-high heat 10 minutes or until done, stirring occasionally. Stir in bell pepper, chili powder, salt, and pepper; cook 2 to 3 minutes.
- Stir in cauliflower. Cook 5 minutes. Remove from heat. Stir in tomato and onions. Divide among 4 bowls; top with cheese and avocado.
