Broiled Greek Flounder

Ingredients

  • 6 (6-oz) flounder fillets (or use grouper)
  • 1 pint grape tomatoes
  • ½ cup pitted kalamata olives, halved
  • 3 Tbsp olive oil
  • 2 tsp Greek seasoning
  • ½ tsp pepper

Instructions

  1. Preheat broiler. Place fish, tomatoes, and olives on a greased baking sheet. Combine oil and Greek seasoning in a small bowl; rub all over fish. Sprinkle with pepper.
  2. Broil 5 minutes per side or until fish flakes with a fork.

Side Dish Ingredients

  • 1 bunch kale, stems removed
  • ½ cup olive oil
  • ¼ cup plain whole milk Greek yogurt
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 2 tsp Dijon mustard
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Thinly slice kale.
  2. Whisk together oil, yogurt, lemon juice, garlic, and mustard in a bowl. Add kale and cheese; toss.
