Lamb Ragu
Garlicky ZoodlesIngredients
- ½ onion, chopped
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 1½ lb ground lamb (or use ground beef)
- 1 tsp kosher salt
- 1 tsp dried oregano
- ½ tsp pepper
- 1 (14.5-oz) can crushed tomatoes
- ½ cup red wine (or use low-sodium beef broth)
Instructions
- Sauté onion and garlic in hot oil in a large saucepan over medium-high heat 5 minutes. Stir in lamb, salt, oregano, and pepper.
- Cook 4 minutes or until lamb is browned and crumbly. Stir in tomatoes and wine.
- Simmer 35 minutes or until thick.

Side Dish Instructions
- Using a spiralizer, cut zucchini into noodles, or cut zucchini lengthwise into ¼-inch-thick slices.
- Stack zucchini slices, 3 at a time, and cut lengthwise into thin strips to resemble strands of pasta.
- Cook zucchini and garlic in hot oil in a large skillet over medium-high heat, stirring often, 2 to 3 minutes or just until thoroughly heated. Season with salt and pepper to taste.
