Ingredients

  • ½ onion, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ lb ground lamb (or use ground beef)
  • 1 tsp kosher salt
  • 1 tsp dried oregano
  • ½ tsp pepper
  • 1 (14.5-oz) can crushed tomatoes
  • ½ cup red wine (or use low-sodium beef broth)

Instructions

  1. Sauté onion and garlic in hot oil in a large saucepan over medium-high heat 5 minutes. Stir in lamb, salt, oregano, and pepper.
  2. Cook 4 minutes or until lamb is browned and crumbly. Stir in tomatoes and wine.
  3. Simmer 35 minutes or until thick.

  • 1½ lb zucchini
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • ½ tsp salt

Side Dish Instructions

  1. Using a spiralizer, cut zucchini into noodles, or cut zucchini lengthwise into ¼-inch-thick slices.
  2. Stack zucchini slices, 3 at a time, and cut lengthwise into thin strips to resemble strands of pasta.
  3. Cook zucchini and garlic in hot oil in a large skillet over medium-high heat, stirring often, 2 to 3 minutes or just until thoroughly heated. Season with salt and pepper to taste.
