Sage Pork Chops

Bacon-Roasted Brussels Sprouts

Ingredients

  • 2 bone-in pork loin chops
  • 1 Tbsp avocado oil
  • 1 tsp dry rubbed sage
  • ¼ tsp garlic salt
  • ¼ tsp pepper

Instructions

  1. Rub pork with ½ Tbsp oil; sprinkle with sage, garlic salt, and pepper.
  2. Cook in ½ Tbsp hot oil in a nonstick skillet over medium-high heat 5 minutes per side or until done.

Side Dish Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • ½ onion, thinly sliced
  • 2 cloves garlic, minced
  • 4 slices uncured bacon, cut into ½-inch pieces
  • 1 Tbsp avocado oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp Dijon mustard
  • 1 Tbsp balsamic vinegar

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together Brussels sprouts, onion, garlic, bacon, oil, salt, and pepper in a large bowl. Spread in an even layer on a rimmed baking sheet.
  2. Bake 20 to 30 minutes or until Brussels sprouts are tender. Stir together mustard and vinegar; add to Brussels sprouts, and toss.
