Mushroom and Sausage Toasted Gnocchi

Ingredients
- 3 Tbsp butter
- 1 (9-oz) pkg gnocchi
- 1 tsp Italian seasoning
- ⅓ cup freshly grated Parmesan cheese, divided
- ¾ lb ground Italian sausage
- 1 (8-oz) pkg sliced mushrooms
- 1 (14.5-oz) can unsalted diced tomatoes
Instructions
- Melt butter in a large skillet over medium-high heat. Add gnocchi, spreading in a single layer. Cook 10 minutes or until toasted. Toss with Italian seasoning and 2 Tbsp cheese.
- Meanwhile, cook sausage and mushrooms in a large skillet over medium-high heat 8 minutes or until sausage and mushrooms are browned.
- Add tomatoes; cook 5 minutes or until mixture is thickened and sausage is done. Sprinkle with remaining cheese. Serve over gnocchi.
