Baked Cajun Shrimp

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • ¼ cup lemon juice
  • 3 Tbsp salt-free Cajun seasoning (see Note)
  • 2 Tbsp canola oil
  • 2 Tbsp low-sodium soy sauce
  • ¼ tsp salt
  • ¼ tsp pepper
  • 4 cloves garlic, minced
  • 3 lemons, halved

Instructions

  1. Preheat oven to 400°F. Place shrimp in a 13- x 9-inch baking dish.
  2. Whisk together lemon juice, seasoning, oil, soy sauce, salt, pepper, and garlic. Toss with shrimp.
  3. Bake 10 minutes or until shrimp turn pink. Serve with lemons.

  • 2 Tbsp lime juice
  • ½ tsp salt
  • 1 (16-oz) pkg shredded coleslaw
  • 2 cups diced pineapple
  • ⅓ cup chopped fresh cilantro
  • 3 green onions, sliced

Side Dish Instructions

  1. Whisk together oil, lime juice, and salt in a large bowl. Add slaw, pineapple, cilantro, and onions; toss.
