Pepperoni Tortilla Pizzas
Mixed Green SaladIngredients
- 6 large low-carb whole-wheat flour tortillas
- 1 (8-oz) can tomato sauce
- 2 cups sliced mushrooms
- 1 Tbsp dried oregano
- 1½ cups shredded part-skim mozzarella cheese
- ½ (5-oz) pkg turkey pepperoni
Instructions
- Preheat oven to 400°F. Coat both sides of tortillas with cooking spray, and place on 2 large baking sheets.
- Bake 3 to 4 minutes or until lightly browned. Remove from oven, and turn tortillas. Spoon about 2 Tbsp sauce over each tortilla. Top with mushrooms, oregano, cheese, and pepperoni.
- Bake 4 to 5 minutes longer or until cheese melts. Let stand 2 minutes; cut into wedges.
Side Dish Ingredients
- 1 (10-oz) pkg mixed greens
- ⅓ cup balsamic vinaigrette
Side Dish Instructions
- Toss together greens and vinaigrette in a bowl.
