Ingredients

  • 1½ lb boneless center cut pork loin chops
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • 6 slices bacon, chopped
  • 6 oz cream cheese
  • 1½ cups shredded Cheddar cheese, divided
  • 1 Tbsp Ranch dressing mix

Instructions

  1. Preheat broiler. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done; remove pork from skillet. Keep warm.
  2. Meanwhile, cook bacon in a skillet over medium-high heat 6 to 8 minutes or until crisp.
  3. Combine bacon, cream cheese, ¾ cup Cheddar, and dressing mix. Spread mixture on pork; sprinkle with ¾ cup Cheddar. Broil 2 to 3 minutes or until cheese melts and mixture is thoroughly heated.

  • 1 (10-oz) pkg spinach
  • 2 Honeycrisp apples, sliced (or use any sweet apple)
  • ½ cup olive oil vinaigrette
  • ¼ cup dried cranberries
