Cheesy Bacon-Ranch Pork Chops

Ingredients
- 1½ lb boneless center cut pork loin chops
- ½ tsp salt
- ½ tsp pepper
- 1 Tbsp olive oil
- 6 slices bacon, chopped
- 6 oz cream cheese
- 1½ cups shredded Cheddar cheese, divided
- 1 Tbsp Ranch dressing mix
Instructions
- Preheat broiler. Sprinkle pork with salt and pepper. Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done; remove pork from skillet. Keep warm.
- Meanwhile, cook bacon in a skillet over medium-high heat 6 to 8 minutes or until crisp.
- Combine bacon, cream cheese, ¾ cup Cheddar, and dressing mix. Spread mixture on pork; sprinkle with ¾ cup Cheddar. Broil 2 to 3 minutes or until cheese melts and mixture is thoroughly heated.

- 1 (10-oz) pkg spinach
- 2 Honeycrisp apples, sliced (or use any sweet apple)
- ½ cup olive oil vinaigrette
- ¼ cup dried cranberries
