Crispy Grouper Piccata
Sautéed Spinach
Ingredients
- ⅓ cup almond flour
- ¼ tsp kosher salt, divided
- ¼ tsp pepper, divided
- ¼ cup roasted garlic mayonnaise
- 3 (6-oz) grouper fillets
- 1 Tbsp olive oil
- 2 Tbsp lemon juice
- 2 Tbsp low-sodium chicken broth
- 1½ Tbsp capers
- 1 Tbsp butter
Instructions
- Toss together almond flour and ⅛ tsp each salt and pepper in a shallow bowl. Stir together mayonnaise and ⅛ tsp each salt and pepper in a large bowl. Dip fish in mayonnaise mixture; dredge in almond flour mixture, shaking off excess.
- Cook fish in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until fish flakes with a fork. Remove from skillet.
- Add lemon juice and broth to skillet, scraping skillet to loosen browned bits. Cook 2 minutes or until reduced by half. Add capers and butter; cook 2 minutes or until slightly thickened. Serve sauce with fish.
- Serve over Sautéed Spinach recipe, if desired.

- 1 (6-oz) pkg baby spinach
- ½ tsp garlic salt
- ⅛ tsp pepper
Side Dish Instructions
- Heat oil in a skillet over medium heat. Gradually add spinach, and cook 2 minutes or just until wilted. Stir in garlic salt and pepper.
